I have known "Mike" for two months, on Saturday he told me he "was interested." He also said "I'll call you." Its Thursday. Should I freak out quite yet?

No, you should chill, relax a little. Ya know, it's never an attractive quality to be perceived as "desperate" or "too eager" :c)
Seriously though, have more confidence in yourself girl! You are worth getting to know & one guy isn't the be-all & end-all. Having said that, why not use some girl power & be the one to give him a call. If you like him, let him know by expressing the interest you're looking for from him, it's the 21st century after all.
